I like your vision of the dark goddess. As it is often the case in his work, Lovecraft didn't fully described this strange god. I like that it got a "Dark Young" feeling to it. Some depictions mention hooves, if I'm not mistaken but I guess Shub-Niggurath is not bound by such limitations when it appears on Earth.
